Carb free courgette “hummus”

Courgette hummus

This carb free courgette hummus isn’t really hummus at all. But it looks like humous and tastes a lot like hummus.

It is fresh, zesty, and perfect if you’ve been rather too successful growing your own courgettes and now have more than you know what to do with. I have shamelessly stolen this recipe from my mum who had this exact predicament and came up with the recipe as a solution. Unfortunately her now legendary courgette ‘hummus’ has proved rather too successful and she is now having to buy courgettes from Waitrose to keep up with the household demands for this dip. Don’t say I didn’t warn you…

Serves 6

Ingredients

3 x medium courgettes (about 750g)

1 x lemon zest and juice

1 x garlic clove

1 x heaped tbl spn of tahini

Salt, pepper

Olive oil

A handful of pine nuts (optional)

Method

Turn the oven on to 180 degrees.

Cut up the courgettes and lay them out on a tray. Drizzle with olive oil and sprinkle salt on them.

Roast for 50 minutes at 180 degrees. Leave to cool.

Add all your ingredients to your magimix and blend until you have a thick, smooth, hummus like texture.

Put in a bowl. Sprinkle with pine nuts and a drizzle of olive oil.

Serve with warmed pitta bread!
