Green goddess pancakes

These green goddess pancakes are sure to give you the boost you need to start your day. They are super easy to make, include spinach so you get a superfood and are topped with an egg for protein and green chilli for a metabolism boost. The zingy yoghurt dressing really makes these pancakes sing and whilst not heavy, they keep you full for hours!

The below recipie makes enough for 3.


For the pancakes

  • 2 good handfuls of spinach
  • 100g self raising flour
  • 1 tsp baking power
  • 120 ml milk
  • 2 spring onions (finely sliced)
  • Good pinch of pepper, paprika, salt
  • 1/2 tsp nutmeg
  • 1 egg

For the topping

  • 3 tbsp plain yogurt
  • 1 green chilli (mild) đŸŒ¶
  • 3 eggs
  • 1-2 spring onion
  • 8-10 chives
  • 2 handful grated Parmesan (or feta)
  • Sqeeze of lemon


First microwave your spinach to cook it or blanch it. Squeeze out all extra the water.


Put all the pancake ingredients into a blender and blitz together. If you want to make your pancakes extra fluffy you can separate your egg yolks from your whites, beat the egg whites till they are nice and fluffy and then fold these into the rest of the pancake mix.


739C13D5-B63C-4364-94DB-60C59DD22064Next make your dressing. Finely chop your spring onion, chives and chilli (use half, but add more if you like it spicy!). Stir these into your yoghurt and add a squeeze of lemon. Put this on the table ready.


028D660F-D734-4C39-8583-E4431EA41C65Heat your oil in a frying pan on a medium heat and add some dollops (technical term) of green goddess pancake mixture.


At the same time, put your eggs on to poach for 4 minutes. Yes I know m AGA needs cleaning!


Once you see little bubbles forming across your pancakes they are ready for flipping, they will only require a few minutes on each side.



Put your pancakes on a plate, add the poached egg on top, put a drizzle of dressing on top and sprinkle with cheese. Salt and pepper as you like, and voila! Green goddess pancakes, the perfect start to a weekend (or any day really).

My final pics don’t show how truly delicious these pancakes are as they got munched too quickly for me to take a good pic, proof in itself!
