Pomegranate Pink Porridge

Pomegranate Pink Porridge

It’s officially porridge season and I am in love with this pink porridge. It looks super pretty, is quick to make and the pomegranates burst in your mouth, plus it’s a healthy start to the day.

Ingredients

Porridge oats

Milk/alternative milk

1 x tbl sp of blueberries (you can add more if you want it a slightly deeper colour )

1 x tbl sp of pomegranates

5 walnuts (or another nut of choice)

Method

Make your porridge as you normally would – I make mine on a hob on a medium heat, stirring occasionally and heat for 4 minutes, but if you make it in the microwave that is fine too. Don’t make it too runny as you will be adding more liquid from your blueberries.

Put your blueberries in a bowl with a couple of teaspoons of water and microwave for 1 minute and 30 seconds. They should be cooked through and in quite a lot of liquid. If not, microwave for another 30 seconds.

Stir your blueberries including the juice into your porridge to make your porridge pink. The sprinkle your nuts and pomegranates on top, and voila. Perfect pink porridge.

What are your favourite winter breakfasts? It takes a little longer but I also love green pancakes with a poached egg.

    I am a terrible cook. With that being said, I HAVE TO IMPROVE! The recipe looks delicious, I loooove pomegranate!

    I am eating pomegranate right now. However this is a new concept for me. I can give it a try once I’m back in India.

    The colours in this look so stunning and I bet Pomegrante added such a kick to the porridge. I have to admit I’m not a huge porridge lover but this looks nice x

    This recipe looks absolutely delicious. However, I’ve never had or made porridge. Is it similar to oatmeal?

      Yes very similar I think. It is just oats so I think maybe a different name for the same thing?

    Honestly I have never had porridge before although I have always been curious. I know that I love pomegranate though. I think I would try this out.

    Porridge is my goto winter breakfast. It keeps you warm and full of energy for hours. Nice twist with the pomegranite and walnuts – would never have thought of that. All the vit c must be good for fending off colds too!

    Looks good although I’m not the biggest fan of pomegranate. Whenever I see the fruit, it reminds me of my trip to Armenia last year!
