This salad has so much goodness in it that you wouldn’t expect it to taste delicious too – but it does! Dark green vegetables are full of antioxidants, vitamins and iron, avoacado and olive oil are healthy fats and asparagus is full of fibre ad great for your gut. It even contains apple cide vinagar which has been show to help weight loss, reduce cholesterol and lower blood sugar, and chilli which speeds up metabolism!
Serve by itself or alongside chicken, fish or lentils.
- 2 x handfuls spinach
- 1 x handful mint
- 2 x handful rocket
- 1/2 red chilli
- 6 x broccoli steams
- 6 x asparagus
- 1/2 a large avocado
- Sunflower seeds
- 1 tbps apple cide vinegar (ideally organic raw)
- 1 tsp whole grain mustard
- 1 tsp honey
- 2 tbsp olive oil
Chop the mint, spinach and rocket. Chop 1/2 a chilli and cube the avocado.
Blanch the broccoli and asparagus for a few minutes in a pan of boiling water.
Meanwhile, mix all the dressing together adding the oil last, a little at a time so that it emulsifiers. This dressing is so yummy and zingy, I always end up drinking a couple of teaspoon fulls!
Put the sunflower seeds, broccoli and asparagus in a frying pan on a medium to high heat with a little olive oil. Cook until the sunflower seeds start to toast and the veg starts to char. Remove before you burn the seeds! This is a key part of the salad as getting a slightly charded flavour really gives it depth.
Toss the dry ingredients togther in a bowl.
Add your dressing to taste – and eat! If you fancy it, add a dollop of hummus in the middle. A super quick, easy and healthy supper.
