As the leaves start to change colour, I want something warming for breakfast, but I’m not quite ready for something as hearty as porridge. Luckily, I think I’ve found the perfect autumn breakfast (or afternoon snack). It’s berry good.
Warm blueberry compote, toasted almonds, oats and yoghurt.
This quick and easy breakfast, is yummy, healthy and I think a million times nicer than mushy textured overnight oats which the internet still seems obsessed with.
1 x handful of blueberries (or any berry)
1 small tbsp of flaked almonds (or a nut of your choosing, walnuts work very well)
1 x handful of oats
2 tbsp of greek yoghurt (you can use any yoghurt but greek yoghurt is high in protein).
Put your oats and flaked almonds in a non-stick pan on a medium heat. Heat until they have started to turn a golden brown. You can make a batch of this and put it in a sealed container for another day.
Put your berries in a bowl in the microwave for 45 seconds or if you don’t have a microwave put them in a pan with a tea spoon of water. After 45 seconds they should be a kind of berry compote, depending on the berry it might take longer so put back in if necessary.
Put your yoghurt in a bowl, sprinkle with your toasted almonds and oats, pour your warm compote on top and you’re done! Five minute, delicious, healthy breakfast ready perfect for Autumn. Mix it up by changing the berries and nuts you use.
